
Now after my introductory blog, I had a really hard time deciding about what in the world to write first. Figured my current new obsession would suffice. So let’s tap into my chocoholic addiction.
Have you seen this recipe for a healthier, more natural version of No Bake Cookies? As if eating regular No Bake Cookies wasn’t already an addiction of mine. Let’s make it “better” the next time I decide to take a bite (or two or three). But seriously, instead of excessive amounts of sugar and butter, this recipe calls for honey as its main sweetener and coconut oil instead of butter.
This is all part of my 21-Day Fix journey (I’m on Day #15) where the main focus is nutrition and portion control. I’m anxious to see the results at the end of three weeks. As of last weekend, I hadn’t lost any weight, but I managed to drop a couple inches. Hey, it’s progress. And for that, I’m pretty excited.
Why am I on this journey? For starters, we all should be eating what God intended instead of the deliciousness that is gobs of sugar, salt and butter. But also I want to be healthy so I can grow old with my husband and play with my child (and any future children) for years to come. I’ve been on this journey for about six years now. Once upon a time, I had lost 50 pounds—just in time for my wedding! But then I started having lower back issues, which forced me to back off the intense workouts like P90X, ChaLEAN Extreme, Brazilian Butt Lift and Insanity (just to name a few). Then insert pregnancy which have totally wreaked havoc on my poor hips. Between the back and hip pains, I slowly gained all that weight back. Now here we are…14 months after giving birth, I’m finally on the cusp of getting rid of this hip bursitis (inflammation of the bursa). So while waiting to be able to move around pain free, I opted to focus on nutrition. So how’s that for transparency about my healthy woes? Everyone has her own journey—and this is mine.

I just made these cookies for the first time. They are really good and an excellent substitue for the original No Bakes Cookies.
